Eggplant

Paid another visit to our local veggie cart and picked up some beautiful eggplants!


Sliced 'em up....






Dipped in fresh eggs from the girls.....


Covered in Italian bread crumbs and added some of the dehydrated basil from last week...


 Fried in EVOO, drained on paper towels and added a dash of sea salt...



And shared with my neighbors! Too bad I didn't make more - absolutely delicious!

    1. Mine, too - I could have it every day! Will have to make room in the garden next year for a plant or two. Or three.

  2. I've got a couple of eggplant fruits coming on. Maybe I'll cook em up this way.

    1. Try it, you'll like it! Just under 3 minutes on each side if you cut them thin - experiment with 'em - use the EVOO - makes a big difference! Heading for the veggie cart now! -
