How to make chicken stock - the easy way!

Ingredients:***

What is left of your chicken from that delicious dinner. (All of it except the stuffing)
A big pot filled with enough water to cover the " boid".
Add:
1 large onion - cut up into chunks
2 stalks of celery - cut up in pieces
1 carrot -  sliced (if you have one)
1 or 2 garlic cloves - your choice, depends how much you like garlic
Salt and pepper to taste (I use fresh ground)
I throw in some coriander, also - about 1/2 tsp.
A couple of bay leaves. (all the spices give it a nice flavor)
Throw everything into the pot, bring to a boil, then quickly turn down to medium-low.  Let it cook on a back burner for a couple of hours. Stir occasionally and add a little water if necessary.

When the meat start to fall off the bones - it's done.

Use a colander to strain everything into another pot. Pick the meat off the bones (please watch out for the tiny rib ones) and add to the stock.

When it cools down, skim off any fat. I usually put in canning jars and freeze it for later use. Don't fill them all the way to the top - leave about an inch of space at the top of jar.

This will  make an excellent starter for homemade chicken soup or add some of the broth when you make mashed potatoes. It gives them a really nice kick!
